If you look around on Instagram, you could almost believe that banana bread is a remedy for the coronavirus. No matter which influencer profile you look at, banana bread is baked everywhere.

I do not know how you are, but for me Immediately feeds. So quickly picked out a banana bread recipe, hurried to the fridge and fruit basket and opened the pantry.

But then: fright I have no more flour! Many of you are probably just like me. After all, flour is a rare commodity.

But I don’t want to give up the dream of juicy-sweet banana bread. My idea: bake banana bread without flour!

Banana bread is grateful because it works without flour. For example, you can replace the flour with ground almonds and oatmeal. Luckily I still had the almonds from the cookie baking time in the cupboard.

For the banana bread recipe without flour you need:

  • 3 ripe bananas (4 for small ones)
  • 3 eggs
  • 2 packets of vanilla sugar
  • 1 tbsp brown sugar
  • 100 g almonds
  • 2 tbsp oatmeal
  • 1 tbsp of oil
  • 1 pinch of salt
  • 1 tsp cinnamon
  • Box mold + baking paper

That’s how it works:

Preheat the oven to 180 degrees circulating air and line the crate with a sheet of baking paper (this saves you greasing).

Crush two bananas with a fork. I personally like it when there are a few small pieces left to taste. Cut the third banana lengthways (it will come on the banana bread later). Then stir all the ingredients for the banana bread without flour into a smooth dough.

Tip: If you like, you can now stir in chopped chocolate or chopped nuts. Also delicious: blueberries in the batter! Allow about 100 g of the extra ingredient.

Place the dough in the baking tin lined with baking paper. Shake until the dough is smooth. Then place the sliced ​​banana on the cake with the cut side up. I personally like to sprinkle some brown sugar and extra cinnamon over it at the end.

Bake the banana bread without flour in the preheated oven for about 45 minutes.

Modify banana bread without flour

The great thing about banana bread: It is super easy to modify and you can try your own variants. How about, for example, Coconut flakes or ground hazelnuts instead of ground almonds. Also, chocolate drops that run in the oven or a tablespoon Maple syrup instead of sugar make great in homemade banana bread.

Do you love spices? Then add the third teaspoon of ground cardamom and some ground nutmeg to your banana bread dough without flour in addition to the teaspoon of cinnamon. This spice mix gives the banana bread a Far Eastern note. The afternoon snack is perfect with an Indian chai latte (Indian spiced tea with milk).

Also welcome: Marble banana bread. Halve the dough and mix one half with a few tablespoons of cocoa. Layer both dough portions alternately in the cheese mold and swirl with a fork as with a classic marble cake.
